Testarossa is an easy, quick way to begin putting better tasting and better for you food on your table. And, because it is frozen, you can always have it on hand. Pasta will be ready in less time than it takes to go through a drivethru!
MY STORY
The journey to making my own pasta and sharing it with you began 6 years ago in a NICU in Ft. Worth. My precious daughter, Catherine had just been diagnosed with a very rare genetic condition that would change our family forever. Her syndrome requires us to follow a very strict, medically supervised diet in order for her to live a full, healthy life. I absolutely love to cook… feeding my family food that taste good is one of my favorite ways to show them I love them. So many things were hard about our diagnosis but imagining a life full of bland and boring but healthy food was especially hard for me to accept.
Nearly a year later, I found myself in Italy. I was eating foods that were normally “off limits” and I was feeling amazing! It began to click that possibly, whole food groups were not the enemy. Perhaps, low quality ingredients were the true culprit! I began experimenting with making more food from scratch and I’ve found ways to make our healthy diet include a wide variety of foods that taste amazing by paying attention to ingredients.
My passion is to bring foods that taste good and feel good into your kitchen. Not everyone has the time, skill or desire to make their own pasta! And that is ok! I hope that Testarossa Pasta will be something that helps you feed your family on the busy nights. I hope it brings joy and good conversation to your tables. Food is a true labor of love in our home and I hope you get all the love with a lot less labor when you cook a pasta kit! Testarossa means ‘redhead’ in Italian.
